It’s raining right now and I’m drinking an Earl Grey tea and everything is just quite lovely today. I’m all about sharing pictures of food so here’s what I had for dinner last night, and breakfast this morning.
I’d bought some pork which I never do and I was looking at it a bit forlorn that it wasn’t ….smaller. And then I realised that I can MAKE MY OWN MINCE. So I put it all in my food processor and minced that shit up. Then I was all…well…what now? So I just googled “mince pork” and picked the first recipe that came up (which I conveniently had most of the ingredients for). This meal is just minced pork, two cloves of garlic, two spoons full of crushed ginger, a bit of a generous helping of chili flakes, soy sauce, lime juice and olive oil. Fry all that up for a while and when you’re getting close to the end add in some broccoli until it’s nice and squishy, and then finish with red onion. Don’t leave the red onion in too long, because it’s best when it’s crispy. This salad would also go nicely with some coriander (alas, I did not have any), some ground rice, some spring onions, and more ginger.
Okay seriously, how does she do it? This is another recipe from Oh She Glows which is fast becoming my favourite recipe site. It’s like every single day there’s a new recipe which is easy to make and delicious, and I already have the ingredients for. What is going on? It’s really wierding me out. This is an Oatmeal Square which is super easy to make if you check out the recipe. The only thing I added was shredded pear, and then I covered it with jam this morning. I ended up making a huge batch which made about six of these toast-sized squares that I’m keeping in a container in the fridge. I also had a raspberry and maple syrup smoothie. While I drank it I thought about the first day I spent in Seattle where I was too excited and crazed about being overseas to actually sit down in a restaurant and eat, so I spent the entire day walking around Seattle eating only raspberries from a giant punnet that I had bought at Pike Place Market.
